With their new Bold Bite and Craft Beer Pairings, Ley Roy Selmon’s is bringing together the two things that we love most: great food and local beer.
Partnering with local breweries, Selmon’s chefs have made special menu items that match the aromas and flavors of favorite local beers from Florida Avenue Ale.
The foods that match the local beers are based off of a simple concept: great ingredients and all natural food done right.
The pairings will be featured at scheduled Selmon’s events, but you don’t need an event to lure you into Selmon’s. You can go and mix and match the following amazing pairings on your own.
Pairing #1
Smoked Shrimp Cocktail: lightly smoked and seasoned shrimp served chilled with Selmon’s BBQ cocktail sauce
Paired with Florida Avenue Blueberry: wheat ale infused with blueberry aroma and flavors
This shrimp goes through a lot before it hits your plate: it is smoked, grilled, and chilled. The end result is a flavor packed version of smokey shrimp cocktail perfectly paired with Slemon’s original recipe BBQ cocktail sauce and blueberry beer.

Selmon’s Brother’s Wings: slow smoked and grilled smothered in Oklahoma sauce
Paired with Florida Avenue Ale: golden ale with a hint of citrus
Like the shrimp, these wings take a journey before finding your table. They are marinated overnight before they are grilled over hickory wood and served smothered in BBQ sauce. Since they aren’t fried, like most wings, flavor isn’t sucked out in fryers making them far more tasty and savory than your average chicken wing.

Smokin’ Summer Chicken Bowl: smoked chicken, Selmon’s rice, diced tomatoes, lettuce, cucumbers, and onions topped with Blue Cheese crumbles
Paired with Florida Avenue India Pale Ale: amber color with mild aromas of floral hops and hints of citrus
A bunch of goodness all rolled into one, the Smokin’ Summer Chicken Bowl is light but heavy with flavor. Mix up the salad, rice, and meat to make a mess of a plate with everything good you want in a meal all mashed up into one.
Pairing #4 — Saved the Best for Last
Chocolate Cake: moist chocolate cake and whipped mousse topped with chocolate fudge icing
Paired with Florida Avenue Betchy Brown: brown ale
A true revelation: chocolate cake and beer. My favorite pairing of the night, the Selmon’s chocolate cake is the perfect amount of richness that doesn’t make the cake too sweet to eat. And paired with Florida Avenue’s nutty brown ale, the cake on my plate went fast as I alternated quickly between a bite and complimentary sip about every six seconds.
